Rachel Khoo
Ze is begin dertig, beeldig, schreef onder andere Little Paris Kitchen en heeft een eigen TV programma op de BBC op maandagavond 21.30 uur. De eerste drie uitzendingen heb ik jammerlijk gemist, de vierde zag ik vanavond en er komen er nog drie. Rachel Khoo kookt, in haar gezellige Parijse keukentje, leuke en maakbare gerechten in een sprankelijk fris programma.

Mosselrecepten van Valentine Warner
Bloggen en tegelijkertijd met een scheef oog naar BBC's Great British Food Revival kijken. Het kan ! Er komen zomaar een paar mean mosselrecepten voorbij. Gauw noteren, snel delen.
Stuffed mussels
This makes a great starter or light lunch dish. Use the biggest, freshest mussels you can find.
Ingredients
24 large live mussels, de-bearded and cleaned
1 large banana shallot, finely chopped
70g/2½oz unsalted butter, softened
50ml/2fl oz dry vermouth
2 garlic cloves, crushed
30-40 walnut halves, smashed or chopped into small pieces
1 lemon, juice and zest
25g/1oz parmesan, grated
50g/2oz fresh breadcrumbs
2 tbsp very finely chopped parsley
½ tbsp finely chopped fresh tarragon
freshly ground black pepper
rock salt
Preparation method
Preheat the grill to a moderate heat. Discard any mussels that are broken or that don’t close when tapped. Place the good mussels into a large pan with a splash of boiling water and cover with a tightly fitting lid. Cook over a high heat for two minutes or until the mussels have just opened then pour them into a large colander and leave to cool.
In a small pan, soften the shallot in about one third of the butter then add the vermouth. Cook until the vermouth has evaporated then pour the mixture into a large bowl.
Combine the rest of the ingredients and the remaining butter with the shallots in the bowl and season with plenty of freshly ground black pepper.
Remove and discard the top shells of the mussels. Add a teaspoon of the stuffing to each mussel and arrange them on a large baking tray. Place under the grill for 2-3 minutes or until the stuffing is golden-brown and bubbling. Transfer the mussels to a plate and scatter generously with rock salt to keep them stable. Eat with additional lemon if desired.
Hearty winter mussels
These rich and creamy mussels are gloriously messy to eat - have a big pile of napkins and a finger bowl to hand.
Ingredients
40g/1½oz butter
2 medium banana shallots, finely diced
2 garlic cloves, finely chopped
2 celery stalks, finely chopped
1 bay leaf
50ml/2fl oz pastis
1 tbsp plain flour
150ml/5fl oz milk
1kg/2lb 4oz mussels, de-bearded and cleaned
300ml/10fl oz white wine
200ml/7fl oz double cream
crusty bread, to serve
Preparation method
Melt the butter in a small saucepan over a low heat and gently cook the shallots, garlic, celery and bay leaf until soft but not brown. Add the pastis and continue cooking until the liquid has evaporated.
Stir in the flour and gently cook for a minute or so then slowly add the milk a little at a time, stirring continuously, to make a smooth, thick sauce.
Meanwhile, tip the mussels and wine into a separate pan, cover with a lid and steam the mussels for 3-4 minutes until the shells have just opened.
Place a colander over the pan containing the white sauce and drain the mussel liquor into the sauce. Return the mussels to their pan and cover with a lid to keep warm.
Working quickly, whisk the mussel liquor into the sauce, bring it to the boil and continue boiling until it is the consistency of double cream. Stir in the cream, pour the sauce into the pot of mussels and serve immediately with crusty bread.

De derde aflevering van The Great British Bake Off was all about bread. Drie opdrachten. De technische uitdaging van vandaag was het maken van een focaccia. Tussendoor wat Engelse en Ierse broodweetjes waaronder een kleine reportage over de schotse "Aberdeen butteries" . Hieronder het recept. Ik denk niet dat ik ze ooit ga maken maar voor echte foodies is het lezen van een recept al leuk. De vierde aflevering van TGBBO gaat over koekjes. Kijken!

Ingredients
500g/1lb 2oz strong plain flour, plus extra for dusting
1 x 7g sachet easy-blend dried yeast
1 tbsp soft light brown sugar
1 tbsp sea salt flakes
350ml/12¼fl oz warm water
vegetable oil, for greasing
275g/9¾oz butter, plus extra to serve
100g/3½oz lard
ready-made jam, to serve
Preparation method
In a large bowl, mix together the flour, yeast, sugar and salt until well combined.
Make a well in the centre of the mixture, then gradually add the water in a thin stream, stirring well with a wooden spoon, until the mixture comes together as a dough. (NB: You may not need to use all of the water.)
Turn the dough out onto a lightly floured work surface and knead lightly for 8-10 minutes, or until smooth and elastic.
Transfer the kneaded dough to a clean, greased bowl and cover with a greased sheet of cling film. Set aside in a warm place to rise (prove) for at least one hour, or until the dough has doubled in size.
Meanwhile, in a separate bowl, cream together the butter and lard until well combined. Divide the mixture into four equal portions.
When the dough has proved, turn it out onto a lightly floured surface and knead for a further 1-2 minutes.
Roll out the dough into a 40cm x 20cm/16in x 8in rectangle, about 1cm/½in thick.
Turn the dough around so that the shortest edge is facing you. Spread one portion of the butter and lard mixture over the bottom two-thirds of the dough rectangle.
Fold the remaining one-third of the dough rectangle over onto the butter and lard mixture to cover the centre section of the dough rectangle. Fold the other end of the dough rectangle over the folded dough, so that the dough ends up three times its original thickness.
Roll the dough out again to a 40cm x 20cm/16in x 8in rectangle, about 1cm/½in thick. Repeat the process of spreading and folding with another portion of the butter and lard mixture.
Repeat the process twice more, until all of the butter and lard mixture has been used up and the dough has been rolled out a total of four times.
Preheat the oven to 200C/400F/Gas 6.
Roll the dough out again to a 40cm x 20cm/16in x 8in rectangle, about 1cm/½in thick. Cut the dough into 16 pieces and roll each into a round, flat bun shape.
Transfer the buns to a lightly oiled baking tray and set aside for 40-45 minutes, or until they have doubled in size again (leave enough space between them for expansion).
When the buns have risen, bake them in the oven for 15-18 minutes, or until they have risen further and are golden-brown and cooked through. Set aside to cool on a wire rack.
Serve each buttery warm, spread with butter and jam.

FUGU
Vanavond op Canvas om 20.00 uur een programma over Japanse Michelinsterren en de bereiding van Fugu oftewel de dodelijk giftige kogelvis.
Japan kreeg ineens in de Michelingids van 2009 heel veel aandacht. Tokio telde toen maar liefst elf driesterrenrestaurants, terwijl er in Parijs tien stonden genoteerd. Sindsdien is Tokio een trekpleister voor fijnproevers geworden. Dit jaar staat de teller op 320 Michelinsterren, met veertien driesterrenrestaurants.
Kogelvis
Een van de gerechten die in Tokio te verkrijgen zijn is Fugu of kogelvis. Wie de delicatesse wil proeven, speelt wel met zijn leven. Kogelvis is namelijk een van de giftigste dieren ter wereld. Als het gerecht niet goed is bereid, is het dodelijk. De kok die dit gerecht maakt moet dan ook speciaal zijn opgeleid.
Slechts een paar restaurants in Tokio hebben Fugu op de kaart staan. De weinige chefs die de vis mogen bereiden, hebben een streng examen moeten afleggen. De kunst van het bereiden is het vlees van de ingewanden te scheiden zonder dat er een spatje bloed op kleeft.
Fataal
De vis bevat namelijk het gif tetrodotoxine dat in de ingewanden en in het bloed zit. Deze organen worden met grote precisie verwijderd. De kok moet hierbij zeer nauwkeurig te werk gaan, want bij de kleinste vergissing is het gerecht fataal. Het gif heeft een verlammende werking en doet het slachtoffer sterven door verstikking.
Terzake duikt vrijdag in de sterren van Tokio, de keuken achter de sterren en de fascinerende wereld van de Fugu-chefs.

De taarten van Abel
De taarten van Abel. Een juweeltje in kindertelevisieland. Siemon de Jong maakt samen met een kind een fantasietaart voor iemand die het verdient. Tijdens het scheppingsproces ontstaan gesprekken die ergens over gaan. Dankzij het inlevingsvermogen en de betrokkenheid van Siemon vertellen de kinderen in alle openheid hun verhaal. Mooi en ontroerend.
Dit programma verdient een prijs.

The Great British Bake Off
Ik zapte en stopte onmiddelijk bij de aanblik van koekjes in de vorm van handtasjes en pumps. BBC FOOD TV. Er werd gebakken. The Great British Bake Off , een bakwedstrijd voor gepassioneerde amateurs. In de tuin van een schitterend Schots landgoed stond een fikse partytent. Daarin acht mini designkeukens in pastelkleuren met daarop, in matching colours, acht retro kitchen- Aid keukenmachines. De deelnemers hadden net koekjes gebakken. Daarna volgde scones en tenslotte petit fours in de vorm van meringues, macarons en soesjes. De kwaliteit van de baksels oversteeg die van de baksels op Country Shows die wij vroeger, tijdens vakanties in engeland, bezochten, maar de sfeer neigde wel naar die home-made-gezelligheid. Aflevering 3 kun je op dinsdag 31 augustus bekijken. de herhalingen zijn op zondagavond.

Parijs vanuit 7 verschillende standpunten
Op één van de twee wandvullende televisieschermen in mijn tijdelijke Parijse onderkomen kijk ik dagelijks naar het programma Paris, vu sous 7 angles. Het wordt uitgezonden door de zender NRJ (energy) Paris. Het concept is eenvoudig : Parijs door de ogen van Parijzenaars. een uur lang word je meegenomen door bewoners van Parijs die hun favoriete plekken in de stad laten zien. Het programma heeft een estafette karakter. De eerste gelegenheidsgids bezoekt twee plekken en ontmoet op de tweede lokatie een bekende, vriend of vriendin die je op haar/zijn beurt meeneemt. De eerste plek van vandaag was Jardin des Tuilleries. Een echte toeristentrekker maar door het verhaal van de buurtbewoner werd het een bijzonder item. Actrice Sara Marshall liet een mooi, mij onbekend museum zien. Musee Jaquemart Andre. En Galeriehouder Victoire de Pourtales bracht een bezoek aan Le Marche des Enfants Rouges. Dat deed ik een dag later ook.

Rick Stein in het verre oosten
Verrassing van de dag : Op reis met Rick Stein door het verre oosten. Viel al zappend met m'n neus in de boter of eigenlijk in de garnalen met mango. Rick is een prettige reisgenoot. Hij is rustig maar niet saai, bedachtzaam doch bevlogen. Vandaag mocht de kijker meereizen naar Cambodja en via de Mecong op een boot naar Vietnam. Behalve de landschappen, bezienswaardigheden en de mensen, zien we af en toe de bereiding van een oosters gerecht. Er komen nog meer afleveringen van deze serie. Kijk op de donderdag op BBC 2 om 21.00 uur Nederlandse tijd.
